PERFECT POACHED EGGS First of all, take eggs out to reach room temperature. Depending on the number of eggs to poach, bring enough water to a boil to cover eggs when placed in a shallow pot or deep frying pan. Increase the PH by adding a tablespoon of vinegar. Each egg must be placed in a small glass bowl so that when placing in the water, the yolk won't break. If for example you are poaching 4 eggs, add the first one slowly by tipping the glass bowl, then wait a few seconds before adding additional eggs. As soon as the yolk looks as though it may harden, scoop out the first egg, then the second etc. It may take some practice to get it right but the eggs will be delicious with just enough yolk to dip your toast in.
