SWEET POTATOE CASSEROL This recipre was given to me from my Sister Donna Wagner 4 Cups Sweet Potatoes (3 lbs fresh = 4 cups) 1 Cup Sugar 1/2 cup melted Butter 1 Tsp Vanilla Extract 2 Beaten Eggs Peel and cut the Sweet Potatoes in cubes, then boil in water until tender enough. Drain off all water. Use an electric mixer to blend the above engredients. Mix together these ingedients and place on top of the above mix: 1 Cup Brown Sugar 1/3 Cup Flour 1/2 Cup Butter 1/2 Cup Nuts (Walnuts are best) Preheat oven to 350 degrees F and then cook for 35 to 40 minutes. Be careful since the cooked mixture will be thin until cooled down.
