ZUCCHINI PATTIES Zucchini is one of the easiest squash to grow in any garden which produces an abundance of squash. By planting seeds a month after the first crop, there will be plenty to make all the various recipes such as Zucchini Bread, Zucchini Cakes and even Zucchini Crab Cakes. Try this Pattie recipe who was given to us by Mrs Tillie Jones in West Virginia. INGREDIENTS: 1 Cup Bisquick or other baking mix 1/2 cup shredded mozzarella or cheddar cheese 1/8 teaspoon salt 2 cups shredded Zucchini 2 eggs beaten 2 tablespoons choped onion (optional) 1 tabelespoon butter Combine Bisquick, cheese, salt, eggs, Zucchini and onion in a mixing bowl. Blend well. Melt butter in a large skillet. Spoon heaping tablespoons of Zucchini mixture into skillet. Fry for 3 to 5 minutes per side, until golden brown. Place brownded patties on a peper towel. Add more butter to skillet when necessary for additional batches. Serves 5 to six. For an Italian flair, try dipping these morsels in marinara sauce.
